Mirror recipe: Egg sauce

Three eggs
• Four medium tomatoes
• Pepper
• One medium onion


• Salt
• One table spoon seasoning
• Vegetable oil

• Heat your non-stick frying pan with two spoons of cooking oil (vegetable or olive oil) for about one minute.
• Slice tomatoes, onions and peppers and sauté for 10 minutes. Stir well, else you end up with burnt tomatoes.


• Once the tomatoes and pepper are adequately fried, add salt and the stock cube to taste.
• Beat the eggs in a separate plate with a pinch of salt.
• Pour the beaten eggs on top of the tomato, onion and pepper that you are frying. Allow a minute, and then sauté.


• Break the eggs into crumbs as you fry. When the eggs have fried adequately, put off heat.
Serve with boiled or fried yam, rice or spaghetti.
